Ingredients - Serves 4

Let's Get Started

  1. Clean the goat's stomach thoroughly with vinegar and lime juice.
  2. Boil the heart, liver and lungs until cooked, then chop into small pieces.
  3. In a large pan, sauté the onions, garlic, tomatoes, and bell peppers.
  4. Add the chopped organs to the pan and season with salt, pepper, and coriander.
  5. Stuff the goat's stomach with this mixture and sew it closed.
  6. Cook the stuffed stomach in a large pot of boiling water for about 2 hours, or until tender.
  7. Serve the Buchada de Bode hot, garnished with fresh coriander.
