Buchada de Bode
Buchada de Bode is a traditional Brazilian dish made from the stomach of a goat, which is cleaned and then stuffed with its own organs. It's a popular dish in the Northeast of Brazil.
Ingredients - Serves 4
- Lime - 1, juiced
- Vinegar - 1 cup
- Salt and pepper - To taste
- Coriander - 1 bunch, chopped
- Bell peppers - 2, chopped
- Tomatoes - 2, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Goat's heart, liver and lungs - 1 each
- Goat's stomach - 1
Let's Get Started
- Clean the goat's stomach thoroughly with vinegar and lime juice.
- Boil the heart, liver and lungs until cooked, then chop into small pieces.
- In a large pan, sauté the onions, garlic, tomatoes, and bell peppers.
- Add the chopped organs to the pan and season with salt, pepper, and coriander.
- Stuff the goat's stomach with this mixture and sew it closed.
- Cook the stuffed stomach in a large pot of boiling water for about 2 hours, or until tender.
- Serve the Buchada de Bode hot, garnished with fresh coriander.
