Bucatini Con Le Sarde

Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- White wine - 100 ml
- Saffron - A pinch
- Anchovy fillets - 4
- Onion - 1, finely chopped
- Pine nuts - 50 grams
- Raisins - 50 grams
- Fennel - 1 bulb, finely chopped
- Fresh sardines - 500 grams, cleaned and filleted
- Bucatini pasta - 500 grams
Let's Get Started
- Soak the raisins in warm water for 10 minutes, then drain.
- Heat the olive oil in a large pan over medium heat. Add the onion and fennel and cook until softened.
- Add the anchovy fillets and sardines to the pan and cook until the sardines are cooked through.
- Add the white wine to the pan and let it evaporate.
- Add the saffron, pine nuts, and raisins to the pan and stir to combine.
- In a separate pot, cook the bucatini pasta in boiling salted water until al dente. Drain the pasta, reserving some of the pasta water.
- Add the pasta to the pan with the sardine mixture and toss to combine. If needed, add some of the reserved pasta water to loosen the sauce.
- Season with salt and pepper to taste. Serve the pasta hot.
