Bucatini All'amatriciana

Ingredients - Serves 4

Let's Get Started

  1. Cook the bucatini in a large pot of boiling salted water until al dente.
  2. Meanwhile, cook the guanciale in a large skillet over medium heat until crisp, about 5 minutes.
  3. Add the crushed tomatoes and red pepper flakes to the skillet and simmer for 15 minutes.
  4. Drain the pasta, reserving 1 cup of the pasta water.
  5. Add the pasta and half of the Pecorino cheese to the skillet and toss to combine, adding pasta water as needed to create a sauce.
  6. Serve the pasta with the remaining Pecorino cheese sprinkled on top.
