Bucatini All'amatriciana
A classic Italian pasta dish from Amatrice, made with guanciale, Pecorino cheese, and tomato.
Ingredients - Serves 4
- Salt - To taste
- Pecorino cheese - 1 cup, grated
- Red pepper flakes - 1/2 teaspoon
- Tomatoes - 1 can (28 ounces), crushed
- Guanciale - 4 ounces, thinly sliced
- Bucatini pasta - 1 pound
Let's Get Started
- Cook the bucatini in a large pot of boiling salted water until al dente.
- Meanwhile, cook the guanciale in a large skillet over medium heat until crisp, about 5 minutes.
- Add the crushed tomatoes and red pepper flakes to the skillet and simmer for 15 minutes.
- Drain the pasta, reserving 1 cup of the pasta water.
- Add the pasta and half of the Pecorino cheese to the skillet and toss to combine, adding pasta water as needed to create a sauce.
- Serve the pasta with the remaining Pecorino cheese sprinkled on top.
