Breakfast Burritos
These delicious breakfast burritos are filled with scrambled eggs, crispy bacon, melted cheese, and fresh vegetables.
Ingredients - Serves 4
- Cilantro - 2 tablespoons, chopped
- Avocado - 1, sliced
- Salsa - 1/2 cup
- Salt and pepper - To taste
- Onion - 1/4 cup, diced
- Bell peppers - 1/2 cup, diced
- Cheddar cheese - 1 cup, shredded
- Bacon - 8 slices, cooked and crumbled
- Eggs - 6
- Tortillas - 4 large
Let's Get Started
- In a large skillet, cook the bacon until crispy. Remove from the skillet and crumble into small pieces.
- In the same skillet, sauté the bell peppers and onion until they are soft and slightly caramelized.
- In a bowl, whisk the eggs and season with salt and pepper.
- Pour the whisked eggs into the skillet with the sautéed vegetables. Cook over medium heat, stirring occasionally, until the eggs are scrambled and cooked through.
