Breakfast Burrito
This hearty breakfast burrito is filled with scrambled eggs, crispy bacon, melted cheese, and fresh vegetables.
Ingredients - Serves 2
- Cilantro - 2 tablespoons, chopped
- Avocado - 1, sliced
- Salsa - 1/4 cup
- Salt and pepper - To taste
- Onion - 1/4 cup, diced
- Bell peppers - 1/2 cup, diced
- Cheddar cheese - 1/2 cup, shredded
- Bacon - 4 slices, cooked and crumbled
- Eggs - 4
- Tortillas - 2 large
Let's Get Started
- In a bowl, whisk the eggs with salt and pepper.
- Heat a non-stick skillet over medium heat and add the diced onion and bell peppers. Cook until softened, about 5 minutes.
- Push the vegetables to one side of the skillet and pour in the beaten eggs. Scramble the eggs until cooked through.
