  1. Soak the pork brains in milk for 2 hours, then drain and pat dry.
  2. Beat the eggs in a bowl. In another bowl, mix the flour with salt and pepper.
  3. Dip the brains in the beaten egg, then coat in the flour mixture.
  4. Heat the vegetable oil in a frying pan over medium heat.
  5. Fry the brains until golden brown, about 5 minutes per side.
