Boston Brown Bread Ice Cream Sandwiches

Let's Get Started

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, whisk together the cornmeal, whole wheat flour, all-purpose flour, baking soda, and salt.
  3. Add the molasses and buttermilk to the dry ingredients and mix until well combined.
  4. Fold in the raisins.
  5. Pour the batter into the greased loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool completely.
  8. Once the bread is cooled, slice it into thick slices.
  9. Take a scoop of vanilla ice cream and place it between two slices of the brown bread.
  10. Press gently to form a sandwich.
  11. Repeat with the remaining slices of bread and ice cream.
  12. Wrap each ice cream sandwich in plastic wrap and freeze for at least 2 hours, or until firm.
  13. Serve and enjoy!
