Boston Brown Bread Ice Cream Sandwiches
These delicious ice cream sandwiches are made with homemade Boston brown bread and your favorite ice cream flavor.
Ingredients - Serves 6
- Vanilla ice cream - 2 cups
- Raisins - 1/2 cup
- Buttermilk - 1 cup
- Molasses - 1/2 cup
- Salt - 1/2 teaspoon
- Baking soda - 1 teaspoon
- All-purpose flour - 1 cup
- Whole wheat flour - 1 cup
- Cornmeal - 1 cup
Let's Get Started
- Preheat the oven to 350°F and grease a loaf pan.
- In a large bowl, whisk together the cornmeal, whole wheat flour, all-purpose flour, baking soda, and salt.
- Add the molasses and buttermilk to the dry ingredients and mix until well combined.
- Fold in the raisins.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely.
- Once the bread is cooled, slice it into thick slices.
- Take a scoop of vanilla ice cream and place it between two slices of the brown bread.
- Press gently to form a sandwich.
- Repeat with the remaining slices of bread and ice cream.
- Wrap each ice cream sandwich in plastic wrap and freeze for at least 2 hours, or until firm.
