  1. Soak the beans overnight in a large bowl of water.
  2. Preheat the oven to 300°F.
  3. In a large dutch oven, cook the salt pork over medium heat until it begins to render its fat.
  4. Add the onion and cook until it is soft and translucent.
  5. Drain the beans and add them to the pot along with the molasses, brown sugar, mustard powder, salt, pepper, and water.
  6. Cover the pot and bake for 4-5 hours, or until the beans are tender and the sauce is thickened.
  7. Stir the beans occasionally during cooking, adding more water if necessary.
  8. Serve the beans hot, with a slotted spoon to drain off any excess liquid.
