Let's Get Started

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet.
  2. In a bowl, mix together the feta, mozzarella, eggs, parsley, salt, and pepper.
  3. Lay one sheet of phyllo dough on a clean surface and brush with olive oil. Place another sheet on top and brush with more oil. Repeat until you have a stack of 4 sheets.
  4. Spread a thin layer of the cheese mixture over the top sheet of phyllo. Roll the dough up tightly from one end to the other.
  5. Place the roll seam-side down on the prepared baking sheet. Repeat with the remaining phyllo and cheese mixture.
  6. Bake for 25-30 minutes, or until golden brown.
  7. Let the borek cool for a few minutes before slicing and serving.
