Bolinho de Bacalhau
Bolinho de Bacalhau, or Codfish Balls, are a popular appetizer in Portugal and Brazil. They are made from a mixture of codfish, potatoes, eggs, and parsley, then deep-fried until golden brown.

- Vegetable oil - For frying
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, chopped
- Eggs - 2, beaten
- Potatoes - 2 large, boiled and mashed
- Salted codfish - 500 grams, soaked and shredded

- In a large bowl, combine the shredded codfish, mashed potatoes, beaten eggs, chopped parsley, minced garlic, salt, and pepper.
- Mix well until the ingredients are well combined.
- Shape the mixture into small balls, about the size of a golf ball.
- Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
- Fry the codfish balls in batches until they are golden brown, about 5 minutes.
- Remove the codfish balls with a slotted spoon and drain on paper towels.
- Serve the Bolinho de Bacalhau hot, with a side of lemon wedges or your favorite dipping sauce.
