Bok Choy and Tomato Soup

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the chopped bok choy and diced tomatoes to the pot, and cook for 3-4 minutes until slightly softened.
  4. Pour in the vegetable broth and bring the soup to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 15 minutes to allow the flavors to meld together.
  6. Stir in the soy sauce and sesame oil, and season with salt and pepper to taste.
  7. Remove the soup from heat and let it cool slightly.
  8. Using an immersion blender or regular blender, puree the soup until smooth.
  9. Return the soup to the pot and reheat if necessary.
