Bok Choy and Tofu Curry
This flavorful curry combines bok choy and tofu in a rich and aromatic sauce.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Brown sugar - 1 tablespoon
- Lime juice - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Red curry paste - 2 tablespoons
- Coconut milk - 1 can (400ml)
- Firm tofu - 1 block, cubed
- Bok choy - 4 heads, chopped
Let's Get Started
- Heat vegetable oil in a large pan or wok over medium heat.
- Add minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
- Add red curry paste and stir-fry for another minute.
- Add cubed tofu and cook until lightly browned on all sides.
- Add chopped bok choy and stir-fry for 2-3 minutes until wilted.
- Pour in coconut milk, soy sauce, lime juice, and brown sugar. Stir well to combine.
- Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld together.
- Season with salt to taste.
- Serve the curry over steamed rice or noodles.
- Garnish with fresh cilantro before serving.
