Bok Choy and Salmon Teriyaki
This delicious recipe combines tender bok choy and succulent salmon in a flavorful teriyaki sauce.
Ingredients - Serves 2
- Green onions - 2, sliced, for garnish
- Sesame seeds - 1 tablespoon, for garnish
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Honey - 1 tablespoon
- Soy sauce - 2 tablespoons
- Teriyaki sauce - 1/4 cup
- Bok choy - 4 heads, halved
- Salmon fillets - 2
Let's Get Started
- Preheat the oven to 400°F.
- In a small bowl, whisk together the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger.
- Place the salmon fillets in a baking dish and pour half of the teriyaki sauce mixture over them. Reserve the remaining sauce for later.
- Bake the salmon for 12-15 minutes, or until cooked to your desired doneness.
- While the salmon is baking, heat the vegetable oil in a large skillet over medium heat.
- Add the bok choy halves to the skillet and season with salt and pepper. Cook for 5-7 minutes, or until the bok choy is tender-crisp.
- Pour the reserved teriyaki sauce mixture over the cooked bok choy and toss to coat.
- Serve the salmon fillets on a bed of bok choy and garnish with sesame seeds and sliced green onions.
