Bok Choy and Chicken Soup
This hearty and nutritious soup combines bok choy, chicken, and flavorful broth.
Ingredients - Serves 6
- Green onions - 2, sliced (for garnish)
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 6 cups
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, chopped
- Celery - 2 stalks, sliced
- Carrots - 2, sliced
- Bok choy - 4 cups, chopped
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the onion, garlic, and ginger. Sauté until fragrant.
- Add the chicken and cook until browned.
- Add the carrots, celery, and bok choy. Stir well.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer for 20 minutes, or until the vegetables are tender.
