Bok Choy and Carrot Soup
This healthy and flavorful soup combines the freshness of bok choy and the sweetness of carrots.
Ingredients - Serves 6
- Cilantro - For garnish
- Salt and pepper - To taste
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Carrots - 2 cups, sliced
- Bok choy - 4 cups, chopped
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the onion, garlic, and ginger. Sauté until fragrant and the onion is translucent.
- Add the bok choy and carrots. Cook for a few minutes until slightly softened.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until the vegetables are tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Stir in the coconut milk, soy sauce, and lime juice. Season with salt and pepper to taste.
- Simmer for an additional 5 minutes to allow the flavors to meld together.
- Serve hot, garnished with fresh cilantro.
