Bok Choy and Broccoli Soup
This healthy and flavorful soup combines the goodness of bok choy and broccoli with aromatic spices.
Ingredients - Serves 6
- Cilantro - For garnish
- Salt and pepper - To taste
- Red pepper flakes - 1/2 teaspoon
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Coconut milk - 1 cup
- Vegetable broth - 4 cups
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Broccoli - 2 cups, florets
- Bok choy - 4 cups, chopped
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and onions are translucent.
- Add the bok choy and broccoli florets to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the vegetables are tender.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot and stir in the coconut milk, soy sauce, lime juice, red pepper flakes, salt, and pepper. Heat through.
- Serve hot, garnished with fresh cilantro leaves.
