Bok Choy and Bacon Soup

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
  2. Add the diced onion to the pot and cook until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the chopped bok choy to the pot and cook until wilted, about 3-4 minutes.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
  6. Stir in the soy sauce and sesame oil. Season with salt and pepper to taste.
  7. Serve the soup hot, garnished with the crispy bacon and sliced green onions.
