Bok Choy and Bacon Soup
This hearty soup combines the flavors of bok choy and bacon for a delicious and comforting meal.
Ingredients - Serves 6
- Green onions - 2 stalks, sliced
- Salt and pepper - To taste
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 6 cups
- Bok choy - 4 cups, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Bacon - 6 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
- Add the diced onion to the pot and cook until softened, about 5 minutes.
- Add the minced garlic and cook for an additional minute.
- Add the chopped bok choy to the pot and cook until wilted, about 3-4 minutes.
- Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
- Stir in the soy sauce and sesame oil. Season with salt and pepper to taste.
- Serve the soup hot, garnished with the crispy bacon and sliced green onions.
