Bobó de Camarão

Ingredients - Serves 4
- Cilantro - A handful, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Tomatoes - 2, chopped
- Red bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Coconut milk - 400 milliliters
- Manioc - 1 kilogram, peeled and chopped
- Shrimp - 500 grams, peeled and deveined
Let's Get Started
- Boil the manioc in a large pot of salted water until soft, then drain and mash until smooth.
- In a large pan, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and tomatoes and cook until soft.
- Add the shrimp to the pan and cook until pink.
- Add the mashed manioc and coconut milk to the pan and stir well to combine. Season with salt and pepper.
- Simmer the stew for 15-20 minutes, until it thickens.
- Stir in the chopped cilantro just before serving.
