Fresh Spring Rolls
These fresh spring rolls are a refreshing appetizer for an Asian-inspired meal. They are filled with fresh vegetables and served with a tangy dipping sauce.

- Peanut dipping sauce - For serving
- Cooked shrimp - 1 pound, peeled and deveined
- Fresh cilantro leaves - 1 bunch
- Fresh mint leaves - 1 bunch
- Cucumber - 1, julienned
- Carrots - 2, julienned
- Lettuce - 1 head, shredded
- Rice paper wrappers - 8
Let's Get Started
- Soak the rice paper wrappers in warm water until soft, about 15 seconds.
- Lay the softened wrapper flat on a clean surface. In the center of the wrapper, place a small amount of lettuce, carrots, cucumber, mint, cilantro, and shrimp.
- Fold the bottom of the wrapper up over the filling, then fold in the sides and roll up tightly.
- Repeat with the remaining wrappers and filling.
- Serve the spring rolls with the peanut dipping sauce.
