Gluten Free Rice Paper Spring Rolls
These gluten-free rice paper spring rolls are filled with fresh vegetables and served with a delicious peanut dipping sauce.
Ingredients - Serves 4
- Crushed peanuts - For garnish
- Water - 2 tablespoons
- Honey - 1 tablespoon
- Lime juice - 1 tablespoon
- Soy sauce - 2 tablespoons
- Peanut butter - 1/4 cup
- Cooked rice noodles - 1 cup
- Fresh cilantro leaves - Handful
- Fresh mint leaves - Handful
- Lettuce - 4 leaves, torn
- Bell pepper - 1 medium, julienned
- Cucumber - 1 medium, julienned
- Carrots - 1 large, julienned
- Rice paper wrappers - 8 sheets
Let's Get Started
- Prepare all the vegetables and set aside.
- Fill a large bowl with warm water.
- Dip one rice paper wrapper into the water for a few seconds until it becomes soft and pliable.
- Place the softened rice paper on a clean surface.
- Layer a small amount of each vegetable, rice noodles, mint leaves, and cilantro leaves in the center of the rice paper.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to form a spring roll.
- Repeat with the remaining rice paper wrappers and filling ingredients.
- To make the peanut dipping sauce, whisk together peanut butter, soy sauce, lime juice, honey, and water in a small bowl until smooth.
- Serve the spring rolls with the peanut dipping sauce and garnish with crushed peanuts.
