Popiah
Popiah is a fresh spring roll commonly found in Southeast Asia. It is filled with a variety of vegetables, meat or tofu, and wrapped in a thin crepe-like wrapper.
Ingredients - Serves 4
- Peanuts - 1/4 cup, crushed
- Cilantro - 1/4 cup, chopped
- Lettuce leaves - 8
- Sesame oil - 1 tablespoon
- Hoisin sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Eggs - 2, beaten and cooked into thin omelettes
- Shrimp - 200g, cooked and peeled
- Cooked chicken or pork - 200g, shredded
- Firm tofu - 200g, sliced into strips
- Bean sprouts - 1 cup
- Cabbage - 1/2 small head, thinly sliced
- Carrots - 2, julienned
- Popiah wrappers - 8 sheets
Let's Get Started
- In a large pan, heat the sesame oil over medium heat. Add the garlic and cook until fragrant.
- Add the carrots, cabbage, bean sprouts, tofu, and cooked chicken or pork. Stir-fry for 5 minutes, or until the vegetables are slightly softened.
- Add the soy sauce and hoisin sauce. Stir to combine and cook for another 2 minutes.
- Place a popiah wrapper on a clean surface. Add a lettuce leaf and a spoonful of the vegetable and meat/tofu mixture onto the wrapper.
- Top with a cooked omelette strip, a few shrimp, cilantro, and crushed peanuts.
- Fold the sides of the wrapper over the filling, then roll it up tightly.
- Repeat with the remaining ingredients.
- Serve the popiah rolls with extra hoisin sauce and crushed peanuts on the side.
