Blanquette de Veau
This classic French dish is made with veal, mushrooms, and a creamy white sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Flour - 2 tablespoons
- Bay leaf - 1
- Thyme - 1 teaspoon
- Beef broth - 3 cups
- White wine - 1/2 cup
- Mushrooms - 1/2 pound, sliced
- Garlic - 2 cloves, minced
- Celery - 2 stalks, diced
- Carrots - 2, diced
- Onion - 1, diced
- Butter - 2 tablespoons
- Veal stew meat - 2 pounds
Let's Get Started
- Heat the butter in a large pot over medium heat.
- Add the veal, onion, carrots, celery, garlic, and mushrooms and cook until the vegetables are soft, about 10 minutes.
- Add the white wine, beef broth, thyme, and bay leaf. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- In a small bowl, whisk together the flour and cream until smooth.
- Add the flour mixture to the pot and stir until the sauce is thickened, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
