Blackberry Jelly
This homemade blackberry jelly is sweet, tangy, and bursting with fresh blackberry flavor.
Ingredients - Serves 8
- Pectin - 1 package
- Lemon juice - 2 tablespoons
- Granulated sugar - 3 cups
- Blackberries - 4 cups

- Wash the blackberries thoroughly and remove any stems or leaves.
- In a large pot, combine the blackberries, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the blackberries release their juices and the mixture comes to a boil.
- Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
- Remove the pot from the heat and let the mixture cool slightly.
- Using a fine-mesh sieve or cheesecloth, strain the mixture to remove any seeds or pulp.
- Return the strained liquid to the pot and stir in the pectin.
- Bring the mixture to a rolling boil over high heat, stirring constantly.
- Boil for 1 minute, then remove from heat.
- Carefully pour the hot jelly into sterilized jars, leaving a 1/4-inch headspace.
- Seal the jars with lids and process in a boiling water bath for 10 minutes.
- Remove the jars from the water bath and let them cool completely before storing in a cool, dark place.
- The jelly will thicken as it cools.
