Bissara
Bissara is a traditional Moroccan dish made from dried fava beans and served as a dip or soup. It's a hearty, comforting dish that's packed with protein and fiber.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Dried fava beans - 1 cup
Let's Get Started
- Soak the fava beans overnight in plenty of water.
- Drain the beans and place them in a large pot. Cover with water and bring to a boil.
- Reduce the heat and simmer for about an hour, or until the beans are very soft.
- Drain the beans, reserving some of the cooking liquid.
- In a blender or food processor, combine the beans, garlic, olive oil, cumin, paprika, lemon juice, salt, and pepper. Blend until smooth, adding some of the reserved cooking liquid if necessary to achieve the desired consistency.
- Taste and adjust the seasoning as needed.
- Transfer the dip to a serving bowl and drizzle with a little more olive oil. Sprinkle with fresh parsley and serve warm.
