Bich Quy
Bich Quy is a traditional Vietnamese dessert made with coconut and pandan flavors.
Ingredients - Serves 12
- Shredded coconut - 1/2 cup
- Salt - 1/4 teaspoon
- Sugar - 1/2 cup
- Pandan extract - 1 teaspoon
- Coconut milk - 1 cup
- Glutinous rice flour - 2 cups
Let's Get Started
- In a mixing bowl, combine the glutinous rice flour, coconut milk, pandan extract, sugar, and salt. Mix well until a smooth batter is formed.
- Heat a non-stick pan over medium heat and lightly grease it with oil.
- Pour a small amount of the batter onto the pan to form a thin pancake. Cook for about 1-2 minutes until the edges start to crisp up.
- Flip the pancake and cook for another 1-2 minutes until cooked through.
- Remove the pancake from the pan and repeat the process with the remaining batter.
- Once all the pancakes are cooked, let them cool for a few minutes.
- Cut the pancakes into small rectangular pieces.
- Roll each piece in shredded coconut to coat all sides.
- Serve the Bich Quy immediately or store in an airtight container for later enjoyment.
