Bi Cuon
Bi Cuon is a delicious Vietnamese dish made with shredded pork, fresh herbs, and rice paper rolls.
Ingredients - Serves 4
- Chili pepper - 1, minced
- Garlic - 2 cloves, minced
- Sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Fish sauce - 1/4 cup
- Carrot - 1, julienned
- Cucumber - 1, julienned
- Bean sprouts - 1 cup
- Cilantro leaves - 1/2 cup
- Mint leaves - 1/2 cup
- Lettuce leaves - 12 leaves
- Rice paper wrappers - 12 sheets
- Pork shoulder - 1 pound, cooked and shredded
Let's Get Started
- Prepare the pork by cooking it until tender, then shred it into thin strips.
- In a small bowl, mix together the fish sauce, lime juice, sugar, garlic, and chili pepper to make the dipping sauce.
- Fill a large bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes pliable.
- Place the softened rice paper on a clean surface. Add a lettuce leaf, a few mint and cilantro leaves, some bean sprouts, julienned cucumber and carrot, and a handful of shredded pork on top of the rice paper.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to form a roll.
- Repeat the process with the remaining rice paper wrappers and filling ingredients.
- Serve the Bi Cuon rolls with the dipping sauce on the side.
