Oi Naengguk
Oi Naengguk is a refreshing Korean cucumber cold soup that is perfect for hot summer days.
Ingredients - Serves 4
- Ice cubes - 1 cup
- Chili pepper - 1, thinly sliced (optional)
- Green onions - 2, thinly sliced
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 1 tablespoon
- Vinegar - 2 tablespoons
- Water - 4 cups
- Cucumbers - 2 large, thinly sliced
Let's Get Started
- In a large bowl, combine water, vinegar, soy sauce, sugar, sesame oil, garlic, green onions, and chili pepper (if using). Stir well to combine.
- Add the sliced cucumbers to the bowl and mix until they are well coated with the dressing.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, add ice cubes to the soup to keep it chilled.
