Bell Pepper and Tofu Stir Fry

Let's Get Started

  1. In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and vegetable broth. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5 minutes. Remove tofu from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers and cook for 3-4 minutes, until slightly softened.
  4. Return the tofu to the skillet and pour the sauce mixture over the tofu and bell peppers. Stir well to coat everything in the sauce.
  5. Cook for an additional 2-3 minutes, until the sauce has thickened and the bell peppers are tender-crisp.
  6. Remove from heat and sprinkle with sliced green onions and red pepper flakes.
  7. Serve the stir fry over cooked rice and enjoy!
