Bell Pepper and Tofu Stir Fry
This delicious stir fry combines colorful bell peppers and tofu in a flavorful sauce.
Ingredients - Serves 2
- Cooked rice - 2 cups
- Salt - To taste
- Red pepper flakes - 1/2 teaspoon
- Green onions - 2, sliced
- Vegetable broth - 1/2 cup
- Cornstarch - 1 tablespoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Firm tofu - 8 ounces, cubed
- Bell peppers - 2 medium, thinly sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and vegetable broth. Set aside.
- Heat a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5 minutes. Remove tofu from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and cook for 3-4 minutes, until slightly softened.
- Return the tofu to the skillet and pour the sauce mixture over the tofu and bell peppers. Stir well to coat everything in the sauce.
- Cook for an additional 2-3 minutes, until the sauce has thickened and the bell peppers are tender-crisp.
- Remove from heat and sprinkle with sliced green onions and red pepper flakes.
- Serve the stir fry over cooked rice and enjoy!
