Bell Pepper and Shrimp Stir Fry
This delicious stir fry combines bell peppers and shrimp in a flavorful sauce.
Ingredients - Serves 4
- Green onions - 2 stalks, chopped (for garnish)
- Salt and pepper - To taste
- Cooking oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 teaspoon
- Honey - 1 tablespoon
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Shrimp - 1 pound, peeled and deveined
- Bell peppers - 2 large, thinly sliced
Let's Get Started
- In a small bowl, whisk together soy sauce, sesame oil, honey, cornstarch, and water. Set aside.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and cook for 1 minute, until fragrant.
- Add bell peppers to the skillet and stir fry for 2-3 minutes, until slightly softened.
- Push the bell peppers to one side of the skillet and add shrimp to the other side. Cook shrimp for 2-3 minutes, until pink and cooked through.
- Pour the sauce mixture over the shrimp and bell peppers. Stir well to coat everything in the sauce.
- Cook for an additional 1-2 minutes, until the sauce has thickened.
- Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions.
- Serve hot over steamed rice or noodles.
