Bell Pepper and Black Bean Quesadilla

Ingredients - Serves 2

Let's Get Started

  1. Heat olive oil in a pan over medium heat.
  2. Add the sliced bell peppers and sauté until they are tender, about 5 minutes.
  3. Add the black beans, cumin, paprika, salt, and pepper to the pan. Stir well to combine and cook for another 2 minutes.
  4. Place a tortilla on a flat surface and sprinkle half of the shredded cheese evenly over one half of the tortilla.
  5. Spread half of the bell pepper and black bean mixture over the cheese.
  6. Fold the tortilla in half to cover the filling.
  7. Repeat the process with the remaining tortillas, cheese, and filling.
  8. Heat a large skillet or griddle over medium heat.
  9. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.
  10. Repeat with the remaining quesadilla.
  11. Cut each quesadilla into wedges and serve with sour cream and salsa.
