Beggar’s Chicken
Beggar’s Chicken is a traditional Chinese dish that is slow-cooked in clay. The chicken is stuffed, wrapped, and then baked to perfection.
Ingredients - Serves 4
- Clay or dough - Enough to cover the chicken
- Lotus leaves - 2, soaked and softened
- Scallions - 2, cut into pieces
- Ginger - 1 piece, sliced
- Black pepper - 1 teaspoon
- Salt - 1 tablespoon
- Whole chicken - 1 (about 3-4 pounds)
Let's Get Started
- Clean the chicken and pat it dry. Rub the chicken inside and out with salt and pepper.
- Stuff the chicken with ginger and scallions.
- Wrap the chicken in lotus leaves.
- Cover the wrapped chicken with clay or dough, making sure it is completely sealed.
- Preheat the oven to 350°F (175°C).
- Place the clay-wrapped chicken on a baking sheet and bake for about 3 hours.
- Crack open the clay shell and remove the lotus leaves before serving.
