Beetroot Poriyal
Beetroot Poriyal is a healthy and delicious beetroot stir fry recipe. This South Indian dish is easy to make and packed with nutrients.
Ingredients - Serves 4
- Grated coconut - 1/4 cup
- Salt - To taste
- Green chillies - 2, slit
- Curry leaves - A sprig
- Urad dal - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Oil - 2 tablespoons
- Beetroot - 2, medium size, peeled and grated
Let's Get Started
- Heat oil in a pan and add mustard seeds. Once they start to splutter, add urad dal.
- When the dal turns golden brown, add curry leaves and green chillies. Saute for a few seconds.
- Add the grated beetroot and salt. Mix well, cover and cook on a low flame until the beetroot is cooked.
- Finally, add the grated coconut and mix well. Cook for another 2-3 minutes.
- Serve the Beetroot Poriyal hot with rice or roti.
