Beef Steak with Quinoa Salad

Ingredients - Serves 4
- Fresh parsley - 1/4 cup, chopped
- Lemon juice - 2 tablespoons
- Feta cheese - 1/2 cup, crumbled
- Red onion - 1/2, finely chopped
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Water - 2 cups
- Quinoa - 1 cup
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef steak - 4 pieces
Let's Get Started
- Season the beef steaks with salt and pepper.
- Heat the olive oil in a pan over medium-high heat. Add the steaks and cook to your desired level of doneness. Set aside to rest.
- In a pot, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
