Beef Noodle Soup
A comforting and flavorful beef noodle soup made with tender beef, vegetables, and aromatic spices.
Ingredients - Serves 6
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Green onions - 4, sliced
- Dried noodles - 8 ounces
- Cinnamon stick - 1
- Star anise - 2 pods
- Fish sauce - 2 tablespoons
- Soy sauce - 3 tablespoons
- Beef broth - 8 cups
- Celery - 2 stalks, sliced
- Carrots - 2 medium, sliced
- Ginger - 1-inch piece, grated
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Beef chuck roast - 1.5 pounds, thinly sliced
Let's Get Started
- In a large pot, heat some oil over medium heat. Add the beef slices and cook until browned. Remove the beef from the pot and set aside.
- In the same pot, add the chopped onion, minced garlic, and grated ginger. Cook until fragrant and the onion is translucent.
- Add the sliced carrots and celery to the pot and cook for a few minutes.
- Return the beef to the pot and pour in the beef broth. Add the soy sauce, fish sauce, star anise, and cinnamon stick.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, until the beef is tender.
- While the soup is simmering, cook the dried noodles according to the package instructions. Drain and set aside.
- Once the beef is tender, remove the star anise and cinnamon stick from the soup.
- To serve, divide the cooked noodles among bowls and ladle the beef soup over the noodles.
- Garnish with sliced green onions, chopped cilantro, and a squeeze of lime juice.
