Ingredients - Serves 4

Let's Get Started

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the beef cubes to the pot and cook until browned on all sides.
  5. In a small bowl, mix together the curry powder, turmeric, cumin, coriander, and cayenne pepper.
  6. Add the spice mixture to the pot and stir well to coat the beef and onions.
  7. Add the diced tomatoes and coconut milk to the pot, and season with salt to taste.
  8. Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour, or until the beef is tender.
  9. Serve the beef curry over steamed rice or with naan bread.
  10. Garnish with fresh cilantro before serving.
