  1. Preheat the oven to 325°F.
  2. Season the beef roast with salt and pepper.
  3. Heat a large oven-safe pot or Dutch oven over medium-high heat.
  4. Add the beef roast and sear on all sides until browned, about 5 minutes per side.
  5. Remove the beef roast from the pot and set aside.
  6. In the same pot, add the sliced onion and minced garlic. Cook until the onion is softened, about 5 minutes.
  7. Add the beef broth, Worcestershire sauce, rosemary, and thyme to the pot.
  8. Return the beef roast to the pot and bring the liquid to a simmer.
  9. Cover the pot and transfer it to the preheated oven.
  10. Cook the beef roast for about 2 hours, or until it reaches your desired level of doneness.
  11. Remove the beef roast from the pot and let it rest for 10 minutes before slicing.
  12. Strain the cooking liquid to remove the onion, garlic, and herbs.
  13. Serve the sliced beef with the au jus on the side for dipping.
