Beef and Vegetable Soup
A hearty and nutritious soup made with tender beef and a variety of fresh vegetables.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Thyme - 1 teaspoon
- Bay leaf - 1
- Beef broth - 4 cups
- Tomatoes - 1 can (14 oz), diced
- Green beans - 1 cup, trimmed and cut into 1-inch pieces
- Potatoes - 2, diced
- Celery - 2 stalks, sliced
- Carrots - 2, sliced
- Onion - 1, chopped
- Beef stew meat - 1 lb, cubed
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the beef stew meat and cook until browned on all sides.
- Add the chopped onion, carrots, celery, and potatoes. Cook for 5 minutes, stirring occasionally.
- Pour in the beef broth and add the bay leaf, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 45 minutes, or until the beef is tender.
- Add the green beans and diced tomatoes. Simmer for an additional 10 minutes.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot and enjoy!
