Bay Area Bánh Mì
A delicious Vietnamese sandwich, Bánh Mì, with a Bay Area twist. It's filled with pickled vegetables, fresh cilantro, and your choice of protein.
Ingredients - Serves 4
- Protein choice (tofu, chicken, pork, beef) - 1 pound, cooked and sliced
- Jalapeno peppers - 2, sliced
- Fresh cilantro - 1/2 cup
- Pickled carrots and daikon - 1 cup
- Soy sauce - 2 tablespoons
- Mayonnaise - 1/4 cup
- Baguette - 1 large
Let's Get Started
- Preheat your oven to 350°F and warm the baguette until it's slightly toasted.
- Slice the warm baguette lengthwise but not all the way through.
- Spread a generous amount of mayonnaise on the inside of the baguette.
- Drizzle the soy sauce over the mayonnaise.
- Layer your choice of protein on the bottom half of the baguette.
- Top the protein with the pickled carrots and daikon.
- Add the sliced jalapeno peppers and fresh cilantro.
- Close the sandwich, cut into 4 equal parts, and serve.
