Banh Mi Inspired Pork Wraps
These Banh Mi inspired pork wraps are filled with marinated pork, pickled vegetables, fresh herbs, and a tangy sauce.
Ingredients - Serves 4
- Tortilla wraps - 4
- Sriracha sauce - 2 tablespoons
- Mayonnaise - 1/4 cup
- Fresh basil - 1/2 cup, chopped
- Fresh mint - 1/2 cup, chopped
- Fresh cilantro - 1/2 cup, chopped
- Lettuce leaves - 8
- Salt - 1/2 teaspoon
- Sugar - 1 tablespoon
- Rice vinegar - 1/4 cup
- Daikon radish - 1/2, julienned
- Carrots - 2, julienned
- Brown sugar - 1 tablespoon
- Garlic - 3 cloves, minced
- Lime juice - 2 tablespoons
- Fish sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Pork tenderloin - 1 pound
Let's Get Started
- In a bowl, combine soy sauce, fish sauce, lime juice, minced garlic, and brown sugar. Mix well.
- Add the pork tenderloin to the marinade and let it marinate for at least 20 minutes.
- In another bowl, combine julienned carrots, julienned daikon radish, rice vinegar, sugar, and salt. Mix well and let it sit for 10 minutes to pickle.
- Preheat the grill or grill pan over medium-high heat.
- Grill the marinated pork tenderloin for about 15-20 minutes, or until cooked through. Let it rest for a few minutes, then slice it into thin strips.
- Spread a thin layer of mayonnaise and Sriracha sauce on each tortilla wrap.
- Place a lettuce leaf on each tortilla wrap, then add a generous amount of pickled vegetables.
- Top with sliced pork tenderloin, fresh cilantro, fresh mint, and fresh basil.
- Roll up the tortilla wraps tightly, tucking in the sides as you go.
- Slice the wraps in half diagonally and serve.
