Banh Mi
Banh Mi is a Vietnamese sandwich filled with meats and vegetables, and it's a near-perfect combination of flavors: crisp and juicy, salty and sweet, sour and rich, spicy and cool.
Ingredients - Serves 4
- Jalapeno peppers - 2, thinly sliced
- Fresh cilantro - 1/2 cup
- Cucumber - 1, thinly sliced
- Pickled carrots and daikon radish - 1 cup
- Grilled pork - 1 cup, thinly sliced
- Soy sauce - 2 tablespoons
- Mayonnaise - 1/4 cup
- Baguette - 1 large
Let's Get Started
- Slice the baguette lengthwise, but not all the way through, so it opens like a book.
- Spread the mayonnaise on both sides of the baguette.
- Drizzle the soy sauce over the mayonnaise.
- Layer the grilled pork, pickled carrots and daikon, cucumber, cilantro, and jalapeno peppers on the bottom half of the baguette.
- Fold the top half of the baguette over the fillings.
- Cut the sandwich into four equal parts and serve.
