Basmati Rice Salad
This refreshing and flavorful basmati rice salad is packed with colorful vegetables and tossed in a tangy dressing.
Ingredients - Serves 6
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh mint - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Red onion - 1/4 cup, finely chopped
- Cherry tomatoes - 1 cup, halved
- Cucumber - 1, diced
- Yellow bell pepper - 1, diced
- Red bell pepper - 1, diced
- Water - 2 cups
- Basmati rice - 1 cup
Let's Get Started
- Rinse the basmati rice under cold water to remove excess starch.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed basmati rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and fluffy.
- Once the rice is cooked, remove it from the heat and let it cool completely.
- In a large bowl, combine the cooked and cooled basmati rice, diced red and yellow bell peppers, diced cucumber, halved cherry tomatoes, finely chopped red onion, chopped fresh parsley, and chopped fresh mint.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the rice and vegetable mixture. Toss well to combine and coat everything evenly.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
- Serve chilled and enjoy!
