Barreado
Barreado, a traditional Brazilian dish from the state of ParanĂ¡, is a slow-cooked meat stew prepared in a clay pot. The pot is sealed with a sort of clay made from wheat or cassava flour, hence the name 'Barreado'.
Ingredients - Serves 6
- Wheat flour - Enough to seal the pot
- Water - Enough to cover the meat
- Bay leaves - 2
- Black pepper - 1 teaspoon
- Cumin - 1 teaspoon
- Tomatoes - 2, chopped
- Bacon - 200g, chopped
- Garlic - 4 cloves, minced
- Onions - 2, chopped
- Beef - 1 kg, cut into chunks
Let's Get Started
- In a clay pot, layer the beef, onions, garlic, bacon, tomatoes, cumin, black pepper, and bay leaves.
- Add enough water to cover the meat.
- Seal the pot with a paste made from wheat flour and water.
- Cook on low heat for about 12 hours.
- After cooking, shred the meat and mix it with the sauce in the pot.
- Serve with rice, cassava flour, and sliced bananas.
