Kuksu
Kuksu is a traditional Korean noodle soup made with handmade wheat noodles and a flavorful broth.
Ingredients - Serves 4
- Roasted seaweed - 4 sheets, crumbled
- Eggs - 4
- Green onions - 4, chopped
- Garlic - 3 cloves, minced
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Chicken broth - 6 cups
- Salt - 1/2 teaspoon
- Water - 1/2 cup
- Wheat flour - 2 cups
Let's Get Started
- In a large mixing bowl, combine the wheat flour, water, and salt. Knead the dough until smooth and elastic.
- Roll out the dough on a floured surface and cut into thin noodles.
- Bring a pot of water to a boil and cook the noodles until tender. Drain and set aside.
- In a separate pot, bring the chicken broth to a boil. Add the soy sauce, sesame oil, garlic, and green onions. Simmer for 10 minutes.
- In a small bowl, beat the eggs. Slowly pour the beaten eggs into the simmering broth, stirring gently to create egg ribbons.
- Divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles.
- Garnish with crumbled roasted seaweed and additional chopped green onions, if desired.
- Serve hot and enjoy!
