Banh Duc
Banh Duc is a traditional Vietnamese dish made from rice flour and served with savory toppings.
Ingredients - Serves 4
- Black pepper - 1/2 teaspoon
- Fish sauce - 2 tablespoons
- Green onions - 2, chopped
- Wood ear mushrooms - 1/4 cup, soaked and sliced
- Shrimp - 1/2 cup, peeled and deveined
- Ground pork - 1/2 pound
- Cooking oil - 1 tablespoon
- Salt - 1 teaspoon
- Water - 4 cups
- Rice flour - 2 cups
Let's Get Started
- In a large bowl, mix the rice flour, water, and salt until well combined.
- Heat a non-stick pan over medium heat and add the cooking oil.
- Pour a ladleful of the rice flour mixture into the pan and spread it evenly to form a thin pancake.
- Cook for 2-3 minutes until the pancake is set and slightly golden.
- Repeat the process with the remaining rice flour mixture to make more pancakes.
- In a separate pan, heat some oil and cook the ground pork until browned.
- Add the shrimp, wood ear mushrooms, and green onions to the pan and cook for another 2-3 minutes.
- Season the mixture with fish sauce and black pepper.
- To serve, cut the banh duc pancakes into bite-sized pieces and top with the savory mixture.
- Garnish with additional chopped green onions, if desired.
