House Smoked Salmon
This homemade smoked salmon recipe is the perfect way to enjoy a gourmet meal right at home. The salmon is brined, air dried, and smoked to perfection.
Ingredients - Serves 4
- Wood chips for smoking - 2 cups
- Water - 4 cups
- Black pepper - 1 tablespoon
- Salt - 1/2 cup
- Brown sugar - 1 cup
- Salmon fillet - 1 kg
Let's Get Started
- In a large bowl, mix together the brown sugar, salt, black pepper, and water to create a brine.
- Place the salmon fillet in the brine and let it sit for at least 2 hours, or overnight for best results.
- Remove the salmon from the brine and pat it dry. Let it air dry for about 2 hours to form a pellicle.
- Preheat your smoker to 150°F (65°C) and add the wood chips.
- Place the salmon in the smoker and smoke for about 2 hours, or until the internal temperature reaches 145°F (63°C).
- Remove the salmon from the smoker and let it rest for a few minutes before serving.
