Let's Get Started

  1. In a large bowl, mix together the brown sugar, salt, black pepper, and water to create a brine.
  2. Place the salmon fillet in the brine and let it sit for at least 2 hours, or overnight for best results.
  3. Remove the salmon from the brine and pat it dry. Let it air dry for about 2 hours to form a pellicle.
  4. Preheat your smoker to 150°F (65°C) and add the wood chips.
  5. Place the salmon in the smoker and smoke for about 2 hours, or until the internal temperature reaches 145°F (63°C).
  6. Remove the salmon from the smoker and let it rest for a few minutes before serving.
