Bamia
Bamia is a delicious Middle Eastern stew made with tender okra, tomatoes, and flavorful spices.
Ingredients - Serves 6
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Ground coriander - 1 teaspoon
- Ground cumin - 1 teaspoon
- Vegetable broth - 2 cups
- Tomato paste - 2 tablespoons
- Tomatoes - 4 medium, diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Okra - 1 pound, trimmed and halved
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant.
- Add the okra and cook for 5 minutes, stirring occasionally.
- Add the diced tomatoes, tomato paste, vegetable broth, ground cumin, ground coriander, paprika, salt, and pepper. Stir well to combine.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the okra is tender.
- Taste and adjust the seasoning if needed.
