Balsamic Tempeh Over Arugula
This is a delicious and healthy vegan dish featuring marinated tempeh served over fresh arugula.
Ingredients - Serves 4
- Red onion - 1/4, thinly sliced
- Cherry tomatoes - 1 cup, halved
- Arugula - 4 cups
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1/2 cup
- Tempeh - 8 ounces, cut into cubes
Let's Get Started
- In a bowl, combine the balsamic vinegar, olive oil, garlic, salt, and pepper. Add the tempeh cubes and let marinate for at least 15 minutes.
- Heat a pan over medium heat. Add the marinated tempeh and cook until browned on all sides, about 10 minutes.
