Baked Sweet Potato with Black Beans
A hearty and healthy dish featuring baked sweet potatoes topped with flavorful black beans.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Black beans - 1 can, drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Sweet potatoes - 4 medium
Let's Get Started
- Preheat the oven to 400°F.
- Pierce the sweet potatoes with a fork and place on a baking sheet. Bake for 45 minutes, or until tender.
- While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, until heated through.
- Cut a slit in the top of each baked sweet potato and fluff the insides with a fork.
- Top each sweet potato with the black bean mixture and shredded cheese.
- Return the sweet potatoes to the oven and bake for another 5 minutes, until the cheese is melted.
- Garnish with fresh cilantro before serving.
