Baked Sweet Potato with Black Beans

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Pierce the sweet potatoes with a fork and place on a baking sheet. Bake for 45 minutes, or until tender.
  3. While the sweet potatoes are baking, heat the olive oil in a skillet over medium heat.
  4. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the black beans, cumin, chili powder, salt, and pepper. Cook for another 5 minutes, until heated through.
  6. Cut a slit in the top of each baked sweet potato and fluff the insides with a fork.
  7. Top each sweet potato with the black bean mixture and shredded cheese.
  8. Return the sweet potatoes to the oven and bake for another 5 minutes, until the cheese is melted.
  9. Garnish with fresh cilantro before serving.
