  1. Preheat the oven to 375°F.
  2. Score the duck skin and season with salt and pepper. Place skin-side down in a cold pan, then turn the heat to medium and cook for 6-8 minutes, or until the skin is crispy and the fat has rendered. Flip and cook for another 4-5 minutes, then remove from the pan and shred the meat.
  3. Cook the macaroni according to package instructions, then drain and set aside.
  4. In the same pan, melt the butter over medium heat. Add the flour and cook for 1-2 minutes, stirring constantly.
  5. Slowly whisk in the milk, then bring to a simmer. Cook for 5 minutes, or until thickened.
  6. Remove from the heat and stir in the cheddar and parmesan until melted. Season with salt and pepper.
  7. Add the shredded duck and cooked macaroni to the cheese sauce and stir to combine.
  8. Transfer the mixture to a baking dish and top with the breadcrumbs.
  9. Bake for 20-25 minutes, or until the top is golden and the cheese is bubbly.
