Baked Avocado and Potato Boats

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45 minutes, or until they are soft.
  3. Cut the avocados in half and remove the pits. Scoop out some of the flesh to make a well in the center.
  4. When the potatoes are done, cut them in half and scoop out the flesh. Mix the potato flesh with the avocado, olive oil, salt, and pepper.
  5. Fill the potato skins with the avocado and potato mixture. Top with the shredded cheese.
  6. Bake for 15 minutes, or until the cheese is melted and bubbly.
  7. Top with sour cream and chives before serving.
