Baked Avocado and Potato Boats
A delicious and healthy dish, these baked avocado and potato boats are filled with creamy avocado and topped with crispy potato skins.
Ingredients - Serves 4
- Chives - 2 tablespoons, chopped
- Sour cream - 1/2 cup
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Avocados - 2 ripe
- Potatoes - 4 medium
Let's Get Started
- Preheat the oven to 400°F.
- Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 45 minutes, or until they are soft.
- Cut the avocados in half and remove the pits. Scoop out some of the flesh to make a well in the center.
- When the potatoes are done, cut them in half and scoop out the flesh. Mix the potato flesh with the avocado, olive oil, salt, and pepper.
- Fill the potato skins with the avocado and potato mixture. Top with the shredded cheese.
- Bake for 15 minutes, or until the cheese is melted and bubbly.
- Top with sour cream and chives before serving.
